Brown sausage, then cook onion and garlic in the rendered fat and butter.
Stir in rice, beans and measured cooking liquid; cover and cook until rice is tender.
Fold in seared cheese cubes, coriander and spring onion.
Rest covered for five minutes, then fluff gently and serve.
Serve with grilled meat, cassava flour and a sharp tomato-onion vinaigrette.
