Pelau is a Trinidadian one-pot rice dish in which caramelised sugar colours seasoned chicken before pigeon peas, coconut milk and rice are added.

Marinate chicken with green seasoning, garlic, thyme, salt and pepper for at least 30 minutes.
Melt sugar in a heavy pot until dark amber, add chicken carefully and turn to coat and brown.
Add onion, vegetables, peas and rice and stir for two minutes.
Pour in coconut milk and enough water to cover by about 2 cm; add whole Scotch bonnet.
Cover and cook gently until rice and chicken are done, then rest 10 minutes before fluffing.
Serve with coleslaw, cucumber salad, avocado and pepper sauce.
