Pumpkin qutab is one of the national dishes of Azerbaijan. It is frequently prepared in autumn during the pumpkin season.

Peel and wash the pumpkin, chop into small squares.
Add a little water and steam until it becomes a puree.
Finely chop the onion.
Add oil and salt and fry until golden brown.
Then add the pumpkin and fry.
Seed the pomegranate. Add it to the filling and fry for 5-10 minutes.
Add salt, pepper, and cinnamon to the filling according to taste and mix. Fry until the water has completely evaporated. Then transfer to a bowl to cool.
Add water and salt to the flour, mix with a spoon first, then knead a normal dough.
Divide the dough into 6 pieces and roll them into balls.
Roll out a thin dough as usual. Place a bowl on top and cut in circles.
Put the filling on one side of the circles.
Fold and seal the edges.
Cook the ready qutabs first on a saj or in a pan. Fry in oil when serving.
Served hot, brushed with butter.
